The Little Royalty

  • 2 oz, Gin Km12 Maple
  • 0.50 oz, lemon juice
  • 0.50 oz, maple syrup
  • Dry sparkling wine (Cava style)
  • Grapefruit zest

Preparation

  1. Chill a coupe glass by filling it with ice.
  2. In a shaker filled with ice, pour all ingredients except the sparkling wine.
  3. Add a grapefruit zest to the shaker, expressing its essential oils.
  4. Close the shaker, then shake vigorously.
  5. Empty the ice from the coupe glass, then double-strain the mixture into the glass.
  6. Top with sparkling wine and express a new grapefruit zest over the top.
